Blueberry ginger smoothie… is there anything left to say? I am always looking for an excuse to pop a piece of ginger into the vitamix- and this combo did not disappoint. The inspiration for this smoothie was a botched attempt at making blueberry ginger cookies. While the cookies were a fail, this smoothie was anything but! It’s a glass of blueberry pie goodness that remains on heavy rotation at our house. I hope it quickly becomes a favorite at yours. Enjoy!
Blend together in a high-speed blender:
1 cup blueberries
1 cup baby spinach
Freshly grated ginger (to taste- 1 inch root grated in above smoothie
2 tbsp. milled flax seed
1 cup water (or plant based milk)
