Beets…don’t be scared! Sure, they can taste a bit beet-y, but with some extra love, can make for the mother of all detoxifying juices. Have you checked out their nutrition profile lately? Not only are they loaded with vitamin A, vitamin C, folate, and fiber, the nitrates found in beets can boost your endurance during a tough workout. Nitrates open blood vessels and balance our oxygen levels. Better oxygenation means better athletic performance -and recovery. Who’s in?
Unless you really love beets, though, they need a little help in the flavor department. The trick is in balancing the overpowering beet flavor with other bright and mild flavors from citrus and tender greens. Likewise, golden beets (their yellow buddies) have a distinctly lighter flavor and can be found at many produce-heavy markets (I’ve tracked them down at both Sprouts and Whole Foods). With a killer boost from this detoxifying goodness, who needs Gatorade? Juice and enjoy!
1/2 large beet or 1 small beet (red or orange- red pictured here)
1 apple (red delicious used here)
1 small head romaine lettuce ( 2 cups baby spinach or dandelion greens would work too)
1 small lemon
1 large piece of ginger root (1 used a 3 inch piece-but I LOVE ginger)
Juice and enjoy
*** I wouldn’t recommend kale, as it’s heavy flavor is only concentrated further when juicing. I’ve used celery too, but again found it’s flavor overpowering when paired with the beets.
