Soooo, let’s talk meatless burgers. Countless options? Sure. A labor of love to create a tasty patty that holds up when cooked- and is easy on the tummy? Absolutely. Behold the sweet potato quinoa burger! Gluten free, oil free and vegan, this burger can boss nutritional density with the best of them!
2 cups cooked quinoa
1/2 cup oat flour (I zipped my oats in a coffee grinder, but whole oats work just as well)
2 cups cooked sweet potato
3-4 cloves crushed or minced garlic (optional)
1/2 cup chopped onion (I used red)
2 tsp cumin (or more to taste)
2 tbsp balsamic vinegar
1 pinch of sea salt (optional)
1. Mash sweet potatoes in large bowl. Add all other ingredients and mix well.
2. Form into patties and place in baking dish (I lightly oiled with olive oil, but parchment is a good oil free option).
3. Bake at 350 for 30-40 (look for a light, golden brown finish).
4. Serve on bun or lettuce wrap topped with veggies and toppings of choice (pictured above: Veggies and homemade spicy bean dip).
